Pork Medallions Glazed with Ginger & Pineapple

Serves : 4

Ingredients :

4 pork medallions
3 tbsp vegetable oil
8 tbsp of ginger preserve
150ml pineapple juice

Steps :

1. Heat oil in a large frying pan & brown the medallions over a high heat for 3 mins on each side

2. Add ginger preserve, pineapple juice & seasoning. Simmer for 10 mins to make a light syrupy glaze
Serve with new potatoes and green beans
